Zucchini Patties with Feta and Tzatziki Sauce

Ingredients

Zucchini Patty Ingredients:

  • 2 ½ cups zucchini grated,water squeezed out
  • 2 large eggs beaten
  • cup chopped onion
  • 2 garlic cloves minced
  • ¼ cup crumbled feta cheese
  • cups panko bread crumbs divided (¾ cup for the mixture, ½ cup for coating)
  • tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Cooking oil for frying

Tzatziki Sauce Ingredients:

  • 1 cup plain Greek yogurt
  • ½ cucumber finely chopped and squeezed dry
  • 1 –2 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Chopped fresh dill

Instructions

For Zucchini Patties:

  • Grate the zucchini and squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
  • In a small bowl, beat the eggs.
  • In a medium bowl, combine the grated zucchini, onion, garlic, ¾ cup of the panko, flour, feta, lemon juice, salt, and pepper. Add the beaten eggs and mix until well combined.
  • Place the remaining ½ cup of panko on a plate.
  • Form patties using about ¼ cup of mixture each. Flatten slightly and coat both sides in the panko.
  • Heat a thin layer of cooking oil in a skillet over medium heat.
  • Fry the patties 2–3 minutes per side, until golden brown and crisp.
  • Drain on paper towels. Serve warm, plain or with tzatziki sauce.

For Tzatziki Sauce:

  • Squeeze the excess water from the chopped cucumber using a paper towel or clean cloth.
  • In a bowl, combine the Greek yogurt, cucumber, garlic, olive oil, lemon juice, salt, and dill. Mix well.
  • Refrigerate until ready to serve.

Notes

Add chopped fresh mint or parsley to the patties for extra freshness.
To bake: 400°F for 18–20 minutes on a parchment-lined sheet, flipped halfway. To air fry: 380°F for 8–10 minutes, flipped halfway, both sides sprayed with oil.
