Watermelon Salad with Balsamic and Blueberries

This refreshing watermelon salad is perfect for warm summer days.  This salad combines the sweetness of watermelon and blueberries with savory arugula, feta cheese and red onion.  The salad is then finished with a sweet lime balsamic vinegar dressing.

Ingredients

For Salad:

  • 4 cups arugula leaves lightly packed
  • 4 cups watermelon cubed
  • 1 cup blueberries
  • ½ cup feta cheese crumbled
  • ½ red onion thinly sliced
  • ¼ cup mint leaves

Instructions

For the salad:

  • To assemble the salad, arrange the arugula leaves over a large serving plate or over the base of a large salad bowl.
  • Top with the remaining ingredients by layering the cubed watermelon, blueberries, crumbled feta cheese, thinly sliced red onion and finally the mint leaves.

For the dressing:

  • To make the lime balsamic dressing, add to a mixing bowl the olive oil, balsamic vinegar, lime juice and honey. Whisk until well combined and season to taste with salt and pepper.
  • Drizzle the dressing over the salad and serve.
