Ingredients

  • 1 red bell pepper thinly sliced
  • 1 orange bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • ½ red onion thinly sliced
  • 1 jalapeño thinly sliced (optional for heat)
  • 2 green onions sliced
  • 2 tablespoon chopped fresh cilantro or parsley
  • Juice of 2 limes
  • 2 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • In a small bowl, whisk together lime juice, olive oil, apple cider vinegar, salt, and pepper to make the dressing.
  • In a large bowl, combine all sliced peppers, onion, jalapeño, green onion, and herbs.
  • Pour dressing over the vegetables and toss well to combine.
  • Let sit for at least 10 minutes before serving to allow flavors to meld.
  • Serve chilled or at room temperature.

Notes

• Make it ahead: Pepper slaw keeps well in the fridge for 2–3 days.

• Great topping for tacos, pulled pork, or grilled meats!

• Swap jalapeño for sweet mini peppers if you want it mild.
