Ingredients

  • 1 cup pineapple sliced
  • 2 oranges peeled and sliced with pith removed
  • 2 ripe mangos sliced
  • 2 peaches sliced
  • ¼ cup mint chopped
  • 1 lime juiced with seeds removed
  • 2 tablespoons honey
  • Pinch salt

Instructions

  • Cut the pineapple into thin slices.
  • Peel oranges, remove pith and slice them.
  • Next, peel the mangos, remove pit and dice into bite-sized pieces.
  • Then, peel the peaches, remove pit and dice into bite sized pieces.
  • Add all fruit to a large serving bowl or plate.
  • Add a pinch of salt to enhance flavors and toss fruit gently.
  • Prepare the salad dressing by chopping the mint leaves and juicing the lime.
  • Add mint leaves, lime juice and honey to a small bowl.
  • Whisk together until honey is dissolved.
  • Before serving, drizzle dressing over top of fruit and toss to combine.
  • Garnish with sprigs of fresh mint and lime wedges if desired. Serve and enjoy!
