Cut the pineapple into thin slices.
Peel oranges, remove pith and slice them.
Next, peel the mangos, remove pit and dice into bite-sized pieces.
Then, peel the peaches, remove pit and dice into bite sized pieces.
Add all fruit to a large serving bowl or plate.
Add a pinch of salt to enhance flavors and toss fruit gently.
Prepare the salad dressing by chopping the mint leaves and juicing the lime.
Add mint leaves, lime juice and honey to a small bowl.
Whisk together until honey is dissolved.
Before serving, drizzle dressing over top of fruit and toss to combine.
Garnish with sprigs of fresh mint and lime wedges if desired. Serve and enjoy!
