St. Patrick's Day Sugar Cookies

These St. Patrick's Day Sugar Cookies are the perfect treat to celebrate the luck o' the Irish! The simple sugar cookie recipe is easy to make with just a handful of ingredients. Then, frost the clover shaped cookies with royal icing made from store-bought icing and add some festive sprinkles for a colorful treat.

Ingredients

  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup butter softened (2 sticks or 16 tablespoons butter)
  • 1 cup sugar
  • 1 egg
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract
  • Powdered sugar or flour for rolling
  • 1 container store-bought green icing (or white and add green food coloring)
  • gold sprinkles I used Wilton gold confetti shaped sprinkles and gold sugar sprinkles

Instructions

For the cookies:

  • Preheat the oven to 350 degrees Fahrenheit. Prepare a baking sheet with parchment paper.
  • Whisk together dry ingredients: flour, baking powder, and salt. Set aside.
  • In a mixing bowl, blend the butter and sugar until creamy and light with a hand mixer or stand mixer.
  • Add egg, almond extract, and vanilla extract and mix well.
  • Slowly add dry ingredients and mix until combined. Dough may be a little crumbly.
  • Turn out the dough onto a surface sprinkled with powdered sugar or flour. Press into a ball and then roll out to ¼ inch thickness.
  • Use a shamrock shaped cookie cutters to cut out the dough. Carefully lift shaped cookies to the baking sheet. Using a flat spatula is recommended to help the cookies maintain their shape.
  • Bake cookies for 7 to 9 minutes. Do not brown the cookies.
  • Remove cookies from oven and allow them to cool for at least 20 minutes on the baking sheet before carefully removing to a cooling rack.

For the easy royal icing:

  • Using a store bought container of green icing (or white and add green food coloring to it), spoon all of the icing into a medium-sized microwave safe bowl. Place the bowl in the microwave and heat for 30 seconds. Stir well. Repeat in 15 second increments if needed until icing has thinned out. Allow the icing to cool slightly before frosting the cookies.

To decorate the cookies:

  • After cookies are completely cooled, frost the tops with royal frosting. Add sprinkles immediately so they stick to the icing before it drys.
  • Allow icing to dry before storing in an airtight container between layers of parchment paper.
