  • Line a baking sheet with parchment paper or coat with cooking spray.
  • In a large bowl, combine rolled oats, cashews, pumpkin pie spice, maple syrup and coconut oil.
  • Spread oat mixture onto prepared baking sheet. Bake for 25 minutes or until mixture begins to lightly brown, stirring every 10 minutes.
  • Allow to cool before storing in bags or covered container.
