Pineapple Upside Down Cake Overnight Oats

​​Overnight oats are a healthy and quick way to start your day. They are an easy recipe to prep ahead of time and make a perfect grab and go breakfast.  One of my favorite ways to prepare overnight oats is using this easy Pineapple Dump Cake Overnight Oats recipe. It tastes similar to traditional pineapple dump cake with way less sugar and butter! The best part is this recipe is so versatile and can be adjusted to your dietary needs.

Equipment

  • Container for storing - Mason jar or storage bowl with a lid

Ingredients

  • ½ cup rolled dry oats
  • ½ cup milk regular or plant-based milk,
  • ¼ cup canned crushed pineapples drained or may use fresh pineapple finely chopped or pureed.
  • 1 tablespoon brown sugar or sweetener of your choice
  • ½ tablespoon butter for added flavor, optional...or could substitute coconut oil for butter
  • ¼ teaspoon vanilla extract
  • 3-4 Maraschino cherries stems removed and chopped
  • Pinch sea salt
  • cherries for serving, optional
  • chopped nuts, chocolate chips, fresh pineapple chunks and/or whipped cream for topping/garnish, optional

Instructions

  • Add the oats, milk, crushed pineapple, melted butter, vanilla extract, chopped Maraschino cherries and a pinch of sea salt to a Mason jar or container with a cover. Mix until all ingredients are well-combined.
  • Cover the container and chill in the refrigerate for 6 to 8 hours.
  • When ready to eat, remove the lid and stir until blended. The oats can be eaten warm or cold. Add additional toppings, such as Maraschino cherries, chopped nuts, fresh pineapple chunks, whipped cream or chocolate chips if desired.

Notes

Note: If you prefer the oats warm, microwave in 15 to 30 second increments, stirring in between each one until warmed throughout.
