Mexican Pinwheels

Ingredients

  • 12 flour tortillas
  • 8 ounces cream cheese softened
  • 1 10 ounce can diced tomatoes with green chilies Rotel, drained
  • 1 cup shredded Mexican blend cheese
  • 2 green onions finely chopped

Instructions

  • Combine the cream cheese, tomatoes, shredded cheese and green onions in a large bowl.
  • Place three flour tortillas in a row, making sure the edges are lined up and the ends are overlapping. Spread the mixture in an even layer over all the tortillas.
  • Starting at one end, roll up the tortillas into a large log. Wrap in plastic wrap.
  • Continue rolling until you have four logs.
  • Place the tortillas in the refrigerator to chill for at least 2 hours.
  • When ready to serve, remove the plastic wrap and cut off the uneven ends. Slice the tortillas into one inch slices. Chill until ready to serve.
