  • 1 Cup Shredded Cheddar and Monterey Cheese Mix divided
  • 6 Pickle Slices
  • 5 Slices Turkey Lunchmeat
  • 2 Tomato Slices
  • 1 Avocado peeled and sliced
  • 2 Red Onion Slices
  • 2 Tablespoons Real Mayonnaise
  • Lettuce
  • Minced Parsley optional garnish
  • Small Pickles optional garnish

Instructions

  • Preheat the oven to 400 degrees fahrenheit.
  • Line a small baking sheet with parchment paper and set aside.
  • Line your pickle slices up on paper towels and gently pat them dry, do not squeeze.
  • On the prepared pan, line three pickle slices up, each pickle slice touching the one next to it. Do this on one side of the pan, 2-3 inches over, repeat with the last three pickle slices.
  • Cover each set of pickles with a ½ cup shredded cheese. You may need more or less, depending on the size of your pickles, preferences, etc. Make sure the pickles are fully covered and the cheese makes a square.
  • Bake for 20 minutes or until the outsides are nice and crunchy.
  • Remove from the oven and let cool for about 10 minutes, so it doesn’t fall apart when you pick it up.
  • Make sure the side with the pickles showing goes on the inside of your sandwich.
  • Cover each piece of “bread” with 1 tablespoon of mayo and place the lettuce on first.
  • Roll each piece of turkey meat and place that on next. Then top with the tomato slices and onion slices. End with the avocado slices and a pinch of minced fresh parsley.
  • Place the top of the sandwich on. Garnish with a toothpick and small pickle, then slice in half, if desired. Enjoy!

Notes

• I suggest eating this sandwich right away and not storing it.
• You can use whatever shredded cheese you prefer. We also really liked mozzarella.
• If you don’t let the “bread” rest after coming right out of the oven, the melty cheese could possibly pull apart. Plus, it’s super hot and hard to handle.
• You can use whatever sandwich toppings you prefer, you don’t have to use the sandwich additions I used. This pickle bread can replace any sandwich bread.
