Ingredients

  • 1 sweet potato
  • 1 potato
  • 1 beetroot
  • 2 tablespoon olive oil
  • 2 fresh rosemary sprigs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Salt to taste
  • Pepper to taste

Instructions

  • Step 1: First, preheat the oven to 425º F.
  • Step 2: Cut the vegetables (Sweet potato, potato & beetroot) into ¼ inch thick slices.
  • Step 3: With cookie cutters or a knife, cut the slices into Halloween shapes.
  • Step 4: Place your Halloween vegetables over a baking sheet with parchment paper, and make sure to separate them enough since the beetroot can stain the other vegetables.
  • Step 5: Drizzle your vegetables with oil, sprinkle with salt, ground pepper, onion powder, and garlic powder. Toss to evenly coat.
  • Step 6: Place your vegetables inside the oven and bake for 40 minutes, or until golden and crispy. Once done, remove them from the oven and let them sit for 10 minutes before serving. Enjoy!
