Grinch Haystack Cookies

 A favorite movie for many adults and children during the holidays is How the Grinch Stole Christmas. These Grinch Haystack Cookies were inspired by the classic tale. They are easy to make with just four ingredients and take under 30 minutes!

Ingredients

  • 10 Ounces Chow Mein Noodles
  • 1 12- Ounce Bag Vibrant Green Candy Melts
  • 1 Tablespoon Coconut Oil
  • Large Red Heart Sprinkles

Instructions

  • Line a standard baking sheet with parchment paper.
  • Place the candy melts in a large mixing bowl and microwave for 3 minutes, pausing every 30 seconds to stir them.
  • Once they’re smooth and creamy when stirred, add the coconut oil to the melted chocolate and mix until combined.
  • Add the chow mein noodles to the chocolate and gently fold them in until they’re full coated.
  • Spoon the mixture onto the prepared sheets into small haystacks (about ¼ cup is the size I make).
  • Immediately place a large red heart sprinkle on the top middle of each cookie and place the cookies in the fridge to chill for about 10 minutes or until hardened. Enjoy!

Notes

Grinch Haystack Cookies Tips and Tricks

  • Size of cookies: I use about ¼ cup of the chocolate and chow mien mixture to make the haystacks. However, you can make them bigger or smaller depending on preference. The chocolate will hold together the chow mein noodles regardless of size.
  • If you can’t get vibrant green candy melts: These are not always easy to find. So, you can also use a bright green oil-based food dye and add it to melted white chocolate chips. Add the dye after chips are melted, then add in the coconut oil. You can also use any shade of green you have on hand.
  • If you can’t find large red heart sprinkles: You can use any kind of red heart candy. I also like to use red cinnamon hearts on top of the haytstacks. Another idea is to pipe on the hearts with red icing.
  • If your chocolate is chunky coming out of the microwave: Work the coconut oil into it until it is smooth. If you need to add extra, that is fine, just DO NOT ADD WATER, as it will cause the chocolate to break.
