Add warm water to a mixing bowl to heat the inside of the bowl. Discard the water and add the yeast, sugar, and warm water to the bowl. Stir to mix the ingredients together and let it rest in a warm spot for 7 to 10 minutes until the yeast begins to bubble.
When the yeast is ready, add the flour and salt to the bowl. Using the hook attachment on your stand mixer, blend the ingredients together by mixing on low speed for around one minute.
Once the flour is mixed, turn the speed up to medium and continue kneading the dough until it begins to come together to form a ball.
Lightly flour a work surface and place the dough on it. Knead the dough until it’s smooth and feels like it springs back when you touch it.
Grease a clean bowl with olive oil and place the dough inside. Coat all sides of the dough in the oil and cover the bowl with plastic wrap or a dry towel.
Place the bowl in a warm spot and let it rise for one hour, or until it has doubled in size.
Preheat the oven to 350 degrees Fahrenheit.
After the dough has finished rising, spray a baking sheet or pizza pan with nonstick cooking spray.
Roll the dough out to fit in the pan and place it on top. Fold over the edges to form a crust to keep the sauce from dripping as the pizza bakes.
Brush the top of the crust with oil, then use a fork to pierce the dough all over.
Spread the tomato sauce over the top of the prepared crust and sprinkle with mozzarella cheese.
Spread the artichoke hearts over the top of the cheese, then add the goat cheese and sundried tomatoes.
Place the prepared pizza on the center rack in the oven to bake for 20 to 22 minutes, until the crust is golden brown and the mozzarella cheese on top is melted.
Remove the pan from the oven and garnish with arugula before serving.
