Easy to Make Peppermint Brownies

Cookies are a classic treat during the holiday season, but sometimes you want something different to satisfy your sweet tooth. Whether you’re looking for a unique treat to leave for Santa or a sweet dish to bring to your next holiday party, these cute mini peppermint brownies are perfect. Since they’re made with boxed mix, you can whip them up in no time then dress them up with chocolate and mints for a delicious Christmas treat.

Ingredients

  • 1 box brownie mix 18.3 oz. *This recipe uses Betty Crocker Fudge brownie mix.  If using another brand, follow directions on box for ingredients and baking instructions.  Use white chocolate chips and peppermints as listed in recipe.  
  • 2 large eggs at room temperature
  • 3 tablespoons water
  • cup vegetable oil
  • ¼ cup white chocolate chips
  • ¼ cup peppermints roughly chopped or crushed

Instructions

  • Preheat oven to 350 degrees. Grease 24-well mini muffin tin. In large mixing bowl, combine brownie mix, egg, oil, and water. Mix until just combined.
  • Fill muffin wells 90% full. Bake 10 minutes or until brownies are cooked. Check by inserting a toothpick in the center of brownies-they’re done when the toothpick comes out clean.
  • Remove from oven and immediately make an indentation in each brownie with the back of a spoon or handle of wooden spoon. Place 2-3 white chocolate chips in the center and top with a sprinkle of crushed peppermint.
  • Allow to cool for 5 minutes before removing from pan. Place on cooling rack.

Notes

*This recipe uses Betty Crocker Fudge brownie mix.  If using another brand, follow directions on box for ingredients and baking instructions.  Use white chocolate chips and peppermints as listed in recipe.  
*Starlight peppermints were used in this recipe, but candy canes work well too.  
*Store in airtight container at room temperature for up to 3 days.
