Ingredients

  • 2 pounds mini red potatoes around 20 mini potatoes
  • 1 tablespoon olive oil
  • 1 to 2 teaspoons salt
  • 1 cup shredded sharp cheddar cheese
  • 5 strips bacon cooked and finely chopped
  • Sour cream and dried parsley for serving

Instructions

  • Preheat the oven to 375 degrees.
  • Place the potatoes in a large bowl and toss with olive oil until well coated. Sprinkle the salt over the top of the potatoes.
  • Spread the potatoes evenly on a baking sheet and bake in the preheated oven for 30 to 40 minutes, until the skin is crispy and the inside of the potato is cooked through.
  • Remove the potatoes from the oven and allow to cool slightly, until the potatoes are cool enough to touch. Cut the ends of each potato, then slice it in half. Place each half flat on the baking sheet.
  • Top the potatoes with the shredded cheese and bacon bits and return them to the oven. Bake for 10 minutes, until cheese is melted.
  • Serve topped with a sprinkling of dried parsley and sour cream for dipping or topping.
