Easy Sausage Sweet Potato Hash

  • Preheat oven to 400°F
  • Slice sausage into ½ inch rounds. Dice sweet potato into ½ inch dice (about 3 cups) Slice red onion into ½ inch slices.
  • In a large bowl combine diced sweet potato and red onion slices. Drizzle with 2 Tablespoons olive oil and sprinkle with Italian seasoning, garlic powder and paprika. Toss to coat.
  • Spread sweet potatoes and onion onto a large sheet pan in an even layer. If you cannot make a single layer, use a second sheet pan. Bake for 15 minutes.
  • Add sausage slices, give the sheet pan a good stir, and continue baking for 10 more minutes.
  • Meanwhile, add chopped kale to the same bowl you seasoned the potatoes and onion in. Drizzle with remaining 1 Tablespoon olive oil and season with salt and pepper.
  • Add kale to the sheet pan(s) and bake for an additional 10 minutes. Remove from oven and sprinkle with feta cheese. Toss everything to fully combine
  • Serve topped with your favorite style eggs.
