Ingredients

  • 8 ounces beef sirloin thinly sliced
  • 2 tablespoon soy sauce divided
  • 11 ounces fresh wide rice noodles
  • 1 tablespoon vegetable oil
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 garlic cloves minced
  • 1 bunch green onions cut into 2-inch pieces
  • Salt and black pepper to taste

Instructions

  • Step 1: Marinate the Beef
  • In a bowl, toss sliced beef with 1 tablespoon soy sauce and a pinch of black pepper. Set aside while you prepare the other ingredients.
  • Step 2: Prepare the Noodles
  • Cook rice noodles like instructed from the package. Run under cold water to stop cooking.
  • If using refrigerated noodles, warm them slightly to loosen.
  • Step 3: Stir-Fry the Beef
  • Heat vegetable oil in a large pan or wok over high heat. Add the beef and stir-fry quickly until just browned (about 2–3 minutes). Remove and set aside.
  • Step 4: Cook the Aromatics & Noodles
  • In the same pan, add minced garlic and green onions. Stir-fry for 30 seconds until fragrant.
Add the rice noodles, remaining soy sauce, oyster sauce and sesame oil. Toss gently to coat the noodles.
  • Step 5: Finish the Dish
  • Return the beef to the pan. Stir-fry everything together for 1–2 minutes until heated through. Season with salt and black pepper to taste.
  • Step 6: Serve
  • Serve hot, garnished with extra green onions if desired.
