Easy Air Fryer Oatmeal Cookies with Chocolate Chips

  • Preheat air fryer to 350°F.
  • In a large bowl, beat together your brown sugar, granulated sugar, and coconut oil.
  • Mix together flour, baking soda, cinnamon, and salt in a separate bowl.
  • Add ⅓ of the flour mixture to the sugar and coconut oil mixture. Mix until combined. Repeat until the flour and sugar mixture are incorporated.
  • Add in vanilla extract and egg. Mix until combined.
  • Add in the oats. Mix until combined
  • Fold in the chocolate chips.
  • Add a piece of parchment paper to the bottom of the air fryer basket.
  • Using a 2 tablespoon cookie scoop, form balls of cookie dough. Add as many dough balls as you can to the size of the air fryer basket making sure to leave at least 2 inches of room for them to bake and expand.
  • With a preheated air fryer, cook your cookies at 350°F for five minutes or until golden brown. (Depending on the size of air fryer you will have to repeat the step until all of your dough is cooked. See note.)
  • Once your cookies are done in the air fryer, transfer them to a cooling rack to allow them to cool.

Notes

You can also make a small batch and freeze the remaining amount of dough. It’s best to roll them into the cookie-sized balls so that they are separated and ready to be popped right into the air fryer. Make sure that they are thawed before cooking them.
