To prepare the cookie dough:

  • In a stand mixer, beat together the butter and sugar until the mixture is smooth and creamy.
  • Add the eggs one at a time, beating the dough after each addition. Continue mixing the dough and add the vanilla extract.
  • In a large bowl, add the flour, baking powder and salt. Use a whisk to combine.
  • Add the flour mixture a little bit at a time to the wet ingredients, beating the dough continuously. If the dough begins sticking to the sides of the bowl, stop mixing and scrape the bowl with a spatula.
  • Once the dough is well mixed, use your hands to form the dough into a large ball. Wrap the dough ball in plastic wrap and place it in the refrigerator. Allow the dough to chill for four hours or overnight.

To make the cookies:

  • Preheat the oven to 400 degrees Fahrenheit and remove the dough from the fridge.
  • Lightly flour your work surface and separate the dough ball into four portions. Place one portion on the floured surface and use a rolling pin to flatten the dough into a ¼-inch thick disk. Use a bunny cookie cutter to cut out the shapes and place each cut-out on a cookie sheet lined with parchment paper.
  • Bake the cookies on the center rack in the oven at 400 degrees Fahrenheit for around eight minutes, until the edges of the cookies are just beginning to brown. When your cookies have finished baking, allow them to cool for a few minutes on the pan, then transfer them to a wire cooling rack to cool completely.

To decorate the cookies:

  • When the cookies have fully cooled, you can start decorating. Place the pink candy melts in one microwave safe bowl and the white candy melts in a separate bowl. Heat the candy melts in the microwave in 30-second intervals, stirring between each interval, until the chocolate is fully melted. Spread the melted candy over the top of each cookie and immediately decorate the cookie with sprinkles. Place the coated cookies back on the cooling rack and allow the chocolate to cool and harden before enjoying.
