Ingredients

  • 12 oz package cooked sausage sliced
  • 1 ½ lbs gold baby potatoes halved
  • 1 large green bell pepper diced
  • 1 large yellow onion diced
  • 1 14 oz can diced tomatoes
  • ¾ cup chicken broth
  • 2 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Grated or shredded parmesan for serving

Instructions

  • Add all ingredients to the bottom of a 5 quart or larger slow cooker.
  • Stir and cover the slow cooker and cook on low for 6-8 hours, or high for 3-4 hours, or until the potatoes are fork tender. Adjust salt and pepper, to taste.
  • Garnish with parmesan cheese and serve immediately or keep on warm until ready to serve, enjoy!

Notes

Cooked in a 6qt Crockpot.
Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
Used chicken sausage for this dish, any cooked sausage will work well!
