Christmas Charcuterie

Ingredients

Cheese:

  • 4 oz Cheddar cheese small cubes
  • 4 oz Pepper jack cheese small cubes
  • 4 oz Colby jack cheese small cubes
  • 2- 8 oz double creamed Brie cheese
  • 1 20 oz - double creamed Brie Cheese
  • 6 Babybel cheese rounds
  • 2 cups Fresh Mini Mozzarella
  • 4 oz Blueberry Goat Cheese log

Olives:

  • ¼ cup cup whole black olives pitted
  • ¼ cup whole green olives pitted

Meats:

  • 7 slices salami for the Mickey heads
  • 7 slices pepperoni for the Mickey heads
  • 9 oz. uncured Genoa salami circle cut, folded in half 9 oz.
  • Uncured Pepperoni circle cut folded in half

Fruits and Veggies:

  • ½ cup Raspberries
  • ½ cup Blackberries
  • ½ cup Blueberries
  • 1 cup Strawberries
  • 20-30 baby tomatoes
  • 2 cups Broccoli

Extra’s

  • 2 SM Ramekins filled with jam of choice
  • Black edible markers to draw Mickey face, if desired
  • Naan Dippers

Instructions

Step One: Make the Mickey Mouse Brie

  • The Mickey Mouse Santa Brie cheese will be the centerpiece of your holiday snack board. To turn your Brie into a cute Mickey, start by coloring the outer coating of your eight-ounce Brie with the black edible marker. Then, draw a Mickey face on the larger 20 ounce Brie with the marker, making sure to color in the face outline, nose, and eyes. Place the Mickey face in the center of your serving board, then place the two eight ounce Brie rounds tightly against the face to form the ears.

Step Two: Prepare the Mickey Salami and Pepperoni

  • Next, put together your Mickey Mouse salami and pepperoni. Start by placing one slice of pepperoni on a flat surface, then top it with a second slice covering the bottom half the first slice. Repeat with four more slices of pepperoni. Roll up the meat into large circle and place the roll in a small glass. To make the ears, roll up one piece of pepperoni into a small circle. Use toothpicks to attach the ears to the larger pepperoni roll. Repeat the process with salami slices and arrange each Mickey head on the board above the Brie Mickey, leaving room for the mozzarella and tomato Santa hat.

Step Three: Make the Santa Hat

  • After adding the Mickey Brie to the board, create a Santa hat by arranging a layer of mini mozzarella cheese pieces around the top of Mickey’s face. Then, create the top of the Santa hat with the baby tomatoes and finish with a poof on top using the remaining mini mozzarella.

Step Four: Arrange the Remaining Ingredients on the Board

  • Once you have all your Mickey Mouse elements placed on the board, you can start adding the rest of your charcuterie ingredients to the platter. First, place some small ramekins filled with jam on the board. Then, arrange the cheese cubes, fruit, naan dippers, and broccoli around the board, along with the remaining folded meat slices. After adding the main components, you can fill in empty spaces on the board with the olives.
