  • Wash potatoes to remove any dirt.
  • Pierce potatoes with a fork around the entire potato.
  • Cook at 370°f for 45 minutes or until softened. Remove from air fryer and allow to cool for 10 minutes.
  • Once cooled, slice open the potatoes along the top. Scoop out the inside of the potato taking care to leave the skin intact.
  • Add the potatoes, butter, brown sugar, salt, and pumpkin pie spice to a mixing bowl. Mix until smooth. Then, add chopped pecans and mix until incorporated.
  • Scoop filling back into the skin, top with marshmallows, and cook at 350°f for 5 minutes or until marshmallows start to brown and melt.
  • Top with pecans, if desired and serve warm.
