Add the sugar, brown sugar, and softened butter to a large bowl. Using a stand mixer or hand mixer, beat the ingredients together until the mixture is light and fluffy. Then, add the eggs and vanilla extract and beat until the egg is combined into the rest of the ingredients.
In a separate bowl, combine the flour, salt, cornstarch, and baking soda. Whisk the dry ingredients together until they’re well combined.
Add the dry ingredients to the butter mixture. Beat the flour into the creamed butter until you have a thick dough.
Add the chocolate chips, mini marshmallows, crushed graham crackers, and chocolate bars to the bowl. Carefully stir the s’mores ingredients into the cookie dough.
Preheat the air fryer to 350 degrees Fahrenheit. Line the air fryer basket or tray with parchment paper.
Use a 1 ½ inch cookie scoop to scoop out the dough and place each dough ball in the air fryer basket. Make sure to leave room for the cookies to expand as they bake.
Air fry the cookies for eight minutes. Then, remove them from the air fryer to add toppings.
