In a large bowl, add in the old fashioned oats, maple syrup, coconut oil, light brown sugar, salt, cinnamon and vanilla. Mix ingredients until well combined.
Wrap air fryer basket in foil and cover basket with oatmeal mixture
Cook on 250 for 30 minutes stirring every ten minutes.
Remove granola and place on a sheet pan to dry. Let dry for 30 minutes.
