Preheat the Air Fryer to 400 Fahrenheit (200 Celsius). Then, prepare a baking tray with parchment paper.
Pat the fish fillets dry with paper towels. With a sharp knife, cut each fillet into 4 pieces. Sprinkle each piece with salt and pepper and place on the baking tray.
In a shallow bowl, add panko breadcrumbs, garlic powder, cayenne pepper, chili powder, onion powder and dried oregano and mix to combine.
In another shallow bowl, add the eggs and beat them with a fork.
Dip each piece of fish in the bowl with eggs first. Then, dredge the fish in the bowl with the panko breadcrumb mixture by pressing firmly, but gently with your fingers. Make sure to coat each piece well with panko breadcrumbs.
Grease the air fryer basket with cooking spray. Add fish in the air fryer. You might need to cook it in 2 batches.
Cook on one side for 4 minutes, then flip and cook fish on the other side for 2 minutes or until fish is golden and crispy. Remove from air fryer and keep warm.
Warm the tortillas in the air fryer for one minute.
Assemble tacos by placing lettuce and tomatoes on bottom. Then, add fish to the tortilla and top with cilantro, red chili or jalapeño (if desired) and mayonnaise. Squeeze about a teaspoon of fresh lime juice on top.
Serve and enjoy!
