Shuck the ears of corn. ***An easy method of doing this is by placing the corn on a plate, adding 2 to 3 tablespoons of water and covering it with a paper towel. Microwave it for about 5 minutes. Remove from microwave and cut the stem off at the base. Then, you can easily squeeze the corn out of the husks and silk. This will also soften the corn somewhat before cutting it into ribs***
Use a sharp, heavy knife to cut the corn in half lengthwise. Then, cut the half into another half. Each ear of corn should yield 4 long quarter pieces.
Spray the corn ribs lightly with olive oil and place in air fryer basket.
Air fry corn at 350 degrees Fahrenheit for 10 minutes until corn is cooked.
While corn is cooking, spread grated parmesan cheese out on a flat dish.
When corn is finished cooking, brush each corn rib with mayonnaise and then coat the kernels in the parmesan.
Season ribs with red chili powder. Add a few dashes of cayenne pepper for spicier ribs, if desired.
