I typically do meal planning and food prep on Sundays to get organized for the week ahead. I make out my ingredient list, then check the pantry and refrigerator to see what I already have on hand. Inevitably, there are always some fruits or veggies on the brink of going bad. I absolutely hate throwing food away, so I try to get creative using the left over food items, like in my Spinach and Sautéed Veggie Casserole Dish. As I was cleaning out the fridge this week, I had a few bell peppers that I had not used the previous week. So, I decided to make these Simple Oven Roasted Bell Pepper Strips and Onions. They are so delicious and easy to make!
