Would you like to save this?
STEP 1: PREPARE DRY INGREDIENTS
Preheat the oven to 350 degrees. Prepare a baking sheet with parchment paper. Then, whisk together dry ingredients: flour, baking powder, and salt. Set aside.

STEP 2: PREPARE WET INGREDIENTS, THEN ADD DRY INGREDIENTS
In a mixing bowl, blend the butter and sugar until creamy and light. Add egg, almond extract, and vanilla extract. Mix well. Slowly add dry ingredients and mix until combined. Dough may be a little crumbly.
STEP 3: ROLL OUT DOUGH AND CUT COOKIES
Turn out the dough onto a surface sprinkled with powdered sugar or flour. Press into a ball and then roll out to ¼ inch thickness. Use cookie cutters to create the shamrocks. Carefully lift shaped cookies to the baking sheet. Using a flat spatula is recommended to help the cookies maintain their shape.

STEP 4: BAKE COOKIES
Bake cookies for 7 to 9 minutes. Do not brown the cookies. Allow cookies to cool for at least 20 minutes on the baking sheet before carefully removing to a cooling rack. While cookies are cooling, prepare royal icing.
STEP 5: PREPARE THE ROYAL ICING
Using a store bought container of green icing, spoon all of the icing into a medium-sized microwave safe bowl. Place the bowl in the microwave and heat for 30 seconds. Stir well. Repeat in 15 second increments if needed until icing has thinned out. Allow the icing to cool slightly before frosting the cookies.
STEP 6: DECORATE THE COOKIES
After cookies are completely cooled, frost the tops with royal frosting. Add gold sprinkles immediately so they stick to the icing before it drys. Allow icing to dry before storing in an airtight container between layers of parchment paper.
