I kicked off 2020 by celebrating Veganuary, where I maintained a plant-based diet for the month of January. It was a great start to the year, but as the months have gone by and things have gotten crazy, I have found myself eating more meat again. So, when the kids asked for burgers this week, I decided I needed to do a little experimenting in the kitchen.

I ended up coming up with these delicious Vegan White Bean Burgers! They were so easy to make and full of flavor. I am happy to report that even my kids enjoyed them!

What do I need to make the Vegan White Bean Burgers?
These healthy Vegan White Bean Burgers are so easy to make! You will need these 12 ingredients:
- Cannellini Beans
- Puréed Tomatoes
- Rolled Oats
- Cilantro
- Red Onion
- Lemon Juice
- Olive Oil
- Cumin
- Coriander
- Cayenne Pepper
- Sea Salt
- Black Pepper

These delicious vegan bean burgers come together in just a few simple steps.
Step 1: Prepare the Ingredients
Start off by cooking the onions. Heat 2 tablespoons of olive oil in a frying pan over medium heat. Cook onions until soft and translucent, about 8 minutes. Remove from heat and allow to cool.

Next, rinse and drain the cannellini beans. Place them in a large bowl and mash them with a fork or potato masher. Add in the puréed tomatoes, oats, cilantro, lemon juice, spices and cooked onions. Mix everything together until well combined.
Step 2: Make the Vegan White Bean Burgers
Divide the white bean mixture into 6 balls and press down to form 6 patties.
Step 3: Cook the Vegan White Bean Burgers
Time to cook the burgers! Heat 2 tablespoons of olive oil in a frying pan over medium heat and cook the vegan white bean burgers until golden brown on each side. This takes about 4-5 minutes per side and may need to be done in 2 batches.
Remove the burgers from heat and place on buns with your favorite toppings!
How do I serve the Vegan White Bean Burgers?
I like to serve them on hamburger buns with lettuce, tomato, red onion and Dijon mustard as pictured here. However, they are also delicious without a bun and served on top of a bed of greens. My kids had there vegan bean burgers the same way they would have a regular burger: on a bun with mustard, ketchup and pickles.
Can I store the Vegan White Bean Burgers?
They are best eaten right after making them. However, they can be stored in a covered container in the refrigerator for up to 5 days. They can also be stored in the freezer in a covered container for up to 30 days.

Are the Bean Burgers Gluten-Free?
This recipe can easily be made gluten-free by using gluten-free rolled oats. If placing the burgers on buns, make sure to also use gluten-free buns.

Vegan White Bean Burgers
Ingredients
- 1 15 ounce can white beans drained and washed
- ½ cup tomato purée
- 1 ½ cup oats
- ¼ cup fresh cilantro finely chopped
- 1 onion finely chopped
- ½ cup lemon juice
- 4 to 6 tablespoons olive oil divided
- 2 teaspoon cumin powder
- 2 teaspoon coriander powder
- 2 teaspoon cayenne pepper
- 1 ½ teaspoon sea salt
- 1 teaspoon black pepper
Instructions
- Heat a pan with 2 tablespoon olive oil over medium heat, cook onion until tender and translucent. Remove from heat and allow it to cool down.
- In a large bowl, mash white beans with a fork, then add puréed tomatoes, oats, cilantro, lemon juice, spices and onion. Mix all together.
- Divide into 4 balls and press with your hands to form 4 patties.
- Heat a pan with 2 tablespoons olive oil on medium heat, cook patties until golden brown on each side.
