Happy Thanksgiving Week! I’m sure most of you have a busy week ahead of you, whether you are hosting a family dinner on Thursday or traveling. I am hosting Thanksgiving, which I love to do! Although, it does require a lot of planning to prepare dinner for 16 people. I have to admit, I am not a huge fan of turkey, so my favorite part of Thanksgiving is all of the side dishes. This week I am sharing a quick and easy recipe for homemade cranberry sauce with a twist! I add a little port wine to this for some added spirit, which adds a little flare to this must have side dish. However, if you prefer, this is perfectly lovely without the wine as well.
Here is what you will need:
-1/2 Cup of Fresh Squeezed Orange Juice
-2 tsp of Orange Zest
-2 Cups of Cranberries
-1/2 Cup of Port Wine (optional)
-2/3 Cup of Sugar
-1 tsp of Cinnamon
-1 Tbsp on Cornstarch
-1 Tbsp of Water
- Combine the Orange Juice, Orange Zest, and Port (if using) in a sauce pan and bring to a boil.
- Add 2 Cups of Cranberries, 2/3 Cup of Sugar, and Cinnamon. Then, simmer over low heat for approximately 20 minutes, or until the cranberries are tender and the mixture thickens like jelly.
- In a small cup mix 1 Tbsp of Cornstarch with 1 Tbsp of water, then add this to Cranberry concoction and whisk until thickened. Add more sugar if necessary.
- Transfer to a bowl to cool down. It can be served warm or chilled, whichever you prefer.
